Why is the coconut milk in the coconuts colorless, but the canned ones are white?

To ask about the hottest drink in summer, many people will answer the raw coconut latte that they want to drink but often can’t buy.

The element of “raw coconut” suddenly became hot, and it sounded quite healthy. So the question is, what exactly is raw coconut? Is it raw coconut?

After eating and drinking for so many years, have you noticed that there are so many varieties of coconut-related products? Coconut water, coconut milk, coconut milk, coconut milk and so on. There are even coconuts in milk tea!

What is the difference between them? Why is the coconut milk in coconuts colorless, while the canned coconut milk is white?

Fresh coconut water, a symbol of youth

On the seashore in tropical areas, tall and straight coconut trees can be seen everywhere, the leaves on the top of the trees are like large open umbrellas, and there are many coconuts under the umbrellas.

The coconut is round, and the outermost layer is a smooth yellow-green peel, a bit like a watermelon peel without a pattern, thick and soft.
The coconut fruit grows on a tree that is ten to twenty meters high and will fall down by itself when mature, so this thick layer of skin is like a protective cover to protect the coconut fruit from falling apart. Under the green skin is the hard coconut shell of the coconut.

In contrast to chestnuts, the fiber-filled “husk” of coconut is located on the inner layer, and the outer layer is a smooth yellow-green peel.

There are two types of coconuts commonly seen at our stalls, one is the coconut that is not fully mature, we usually call it “green coconut”; the other is the fully mature old coconut.

If you want to drink the coconut water in the “green coconut”, you may need the seller’s help to chop off one end with a knife:

Semi-ripe coconut, generally called “green coconut”

On the mature old coconut, there are three germination holes for seeds to germinate, which can be opened with chopsticks or even a straw, and you can drink fresh and refreshing pure natural coconut water directly.

Stuck in my head by life

Fresh coconut water is not strong in taste, but it is very powerful.

It is rich in sodium, potassium, magnesium, calcium, phosphorus and other elements, and exists in the form of ions, which can balance the electrolytes in the human body and effectively prevent dehydration. It can be called a natural sports drink.

Coconut chicken has become popular all over the country in recent years

The coconut water drunk directly from the coconut is actually the “liquid endosperm” of the coconut. The color is transparent and clear, with a little sweetness in the acid.

The coconut meat is the “solid endosperm” of the coconut.

As the coconut ages, the liquid endosperm will gradually become solid endosperm, the coconut meat will become thicker and the coconut water will become less and less, and eventually disappear.

White coconut milk, “vegetable milk”

Natural fresh coconut water is inconvenient to store and transport, and it is often only available where coconuts are produced.

So people created another kind of white coconut milk: milky white, sweet and rich, and it looks like milk.

Strictly speaking, this white coconut milk should be called “coconut pulp juice”, which is processed from coconut pulp.

Splitting the hard coconut shell, you can see the white coconut pulp inside. It is thick and soft and tastes like jelly, so you can eat it directly.

The juice squeezed from fresh coconut meat is called coconut milk, added with white sugar, and after further emulsification processing, it becomes the “coconut milk/coconut milk” on the shelf.

Coconut milk is rich in nutrients, and the appearance of the emulsion is praised as “vegetable milk” by people in the industry.

Although this kind of artificial coconut milk is processed after acquired, it tastes really good. It has been popular in the market for so many years, so that many people thought that coconut milk was naturally white when they were young.

Coconut milk is used for dessert, the taste is absolutely perfect!

In addition to being used as “coconut milk”, coconut milk is also a food seasoning in Southeast Asian countries.

Malaysians like to use coconut milk to simmer the coconut-flavored “nasi lemak”, while Thai curry dishes must add pure coconut milk to make the curry the best flavor.

The pulp of coconut can also make a lot of solid snacks.

For example, adding white sugar can make sweet and delicious “coconut flakes”, which are good choices with coffee, milk tea or coconut milk.

After the coconut meat is dried, it can be processed into pure white coconut. In addition to making pastry fillings, sprinkle some small snacks to give out a distinctive aroma.

Coconut flakes

The coconut sugar that everyone eats when they are young is mainly made from coconut milk and sugar.

In the era of material scarcity, a small coconut candy can let the inland people taste the remote tropical atmosphere.

The most classic ingredient of milk tea-coconut, is also related to coconut.

There are many friends who like to eat coconuts, and they often ask the boss to add more.

However, the coconut is not cut into small pieces of coconut meat, but is made by fermenting with 100% fresh coconut water as raw material.

Coconut fruit is very troublesome to make: first, the coconut milk must be steamed, sterilized and plated and cooled; then acetic acid bacteria are added to allow the coconut milk to fully ferment.

After 5-7 days, a milky white viscose thick film will grow on the surface of the coconut milk, which is the embryonic form of the coconut.

Finally, after drying and cutting, the small pieces of coconut are ready. This production process takes about 10 days in total.

Although the coconut is not the pulp of coconut, it has a more crystal clear appearance, a more crunchy taste, and even the coconut flavor in it is more pure.

Therefore, rumors such as “the raw material of coconut fruit is plastic” and “the raw material of coconut fruit is gypsum” are spread online.
